Overview
I have no idea how I happened upon this recipe, but I have been making it since 2013 for birthdays and special occasions. It’s from Spoonful of Flavor, but I can’t find the original recipe on the website (it’s that old). It’s a fun recipe to make any time of year, but if you end up with a ton of chocolate Halloween candy these are a great way to bake with them.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/8 tsp. baking soda
- 1 stick unsalted butter, cold & cubed
- 1/4 cup sugar
- 1/2 cup light brown sugar*
- 1/4 cup dark brown sugar*
- 1 egg
- 1/4 tsp. tsp vanilla extract
- 1/2 semi-sweet chocolate chips
- 1/2 chocolate candy chopped ex. snickers, reese’s peanut butter cups – any chocolate candy!*
Instructions
Step 1
Preheat your oven to 375°F. Set aside 4-6 ramekins.
Step 2
In a small bowl, combine the flour, salt, baking powder, and baking soda; mix to combine.
Step 3
In the bowl of an elctric mixer fitted with the paddle attachment, cream together the butter and sugars until well blended and fluffy. Add egg and vanilla and beat until well incorporated. Add dry ingredients and mix until combined. Fold in chocolate chips and chocolate candy.
Step 4
Fill the ramekins about 3/4″ deep with cookie dough. Set ramekins on a baking sheet and bake on the middle rack of the oven for 15-20 minutes, or until the top is just slightly golden brown. You want to aim for slightly underbaked cookies.
Step 5
Allow to cool slightly, top with ice cream and serve. Be careful as the ramekins will be hot. I usually place them on a pot holder to serve.
Notes
Depending on your ramekins, you may have bigger or smaller pies.
If you don’t have both light and dark sugar, just use what you have on hand.
I’ve used all types of chocolate candy for these, use what you have on hand, or use extra chocolate chips.
